I had to go with Forbidden Fruit, as it is rather forgiving. Now with that said if they pick the yeast a year in advance I may change my opinion. Westmalle or De Dolle would be fun, but those require longer conditioning. The Roselare and Lambic blends would be interesting, but would need even more time.
